Karamani(Black eyed beans) kuzhambu

Karamani(Black eyed beans) kuzhambu is a villagers recipe and it can stored for 2-3 days which will really taste very good from day 2. It is such an easy and tasty south Indian kuzhambu recipe.

Ingredients:
Oil - 2 tablespoon
Mustard - 1/2 teaspoon
Fenugreek Seeds - 12
Shallots - 12 chopped
Garlic - 15
curry leaves
Tomato - 2 chopped
Turmeric powder - 1/4 teaspoon
Salt - As required
Brinjal - 2 chopped
Roasted Karamani (Black eyed beans) - 1 cup
Chili powder - 1 tablespoon
Tamarind - 1/2 lemon sized

When we cook this in iron kadai or sand pot, this recipe will come very nicely. Lets start cooking......


In a iron kadai, add 2 table spoon of sesame oil.


Once oil is heat, add mustard and fenugreek seeds and let is pop.


Now add chopped shallots and Garlic.


Add curry leaves.


Saute it for 2 minutes and add copped tomato.


Once tomato turns soft, add turmeric powder and salt.


Saute for 2 minutes.


Saute till oil separates.


Add chopped brinjal.


Add roasted karamani.


Saute for 1 minute.


Add Chili powder


Add water and cook for 3 min.


Add tamarind paste and cook for 5 minutes.




Once karamani is cooked (it will take hardly 5-8 minutes), turn off the heat.


Now our traditional karamani kuzhambu is ready to serve with rice. Lets cook today and enjoy our meal..... 😋
